Below are a few picnic food ideas for boating which you are surely going to relish.
A. Curried Turkey, Apple and Watercress Sandwich
- 2 tbsp. mango chutney
- 1/2 tsp. curry powder
- 4 oz. sliced turkey
- 1/4 c. mayonnaise
- 1 small-sized Granny Smith apple
- 4 slice whole-grain bread
- 1 c. arugula or watercress
Directions:
1. Inside a bowl, blend mango chutney, mayonnaise, and curry powder.
2. Spread on the whole-grain bread and then top a couple of slices with apple slices, turkey, and arugula or watercress. Sandwich with the rest of the bread slices.
B. Cheeseburger Flatbread Pizza
Ingredients:
- 2 tbsp. ketchup
- 1/2 lb. lean ground beef
- 4 pita bread
- 1/2 small-sized red onion
- 1/2 c. jarred pizza sauce
- 2 tsp. whole-grain mustard
- 1 tbsp. Worcestershire sauce
- 3/4 c. shredded Cheddar
- 1 c. baby arugula
- Black pepper
- 1 c. cherry or grape tomatoes
Directions:
1. Heat the oven to 400 Degree F. Warm a large frying pan over moderate heat. Cook after adding the beef, breaking it up using a spoon, till no more pink for about 4 minutes. Remove from the heat and then blend the ketchup, mustard, Worcestershire, as well as 1/4 teaspoon pepper.
